Ingredients

  • 1 cup oat flour (or finely ground oats)
  • ½ cup canned pumpkin (unsweetened, pure pumpkin)
  • ¼ cup natural peanut butter (xylitol-free)
  • 1 egg

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix pumpkin, peanut butter, and egg until smooth.
  3. Stir in oat flour until dough forms.
  4. Roll into small bite-sized balls or flatten with a cookie cutter.
  5. Place on a parchment-lined baking sheet and bake for 15–20 minutes, until firm.
  6. Cool completely before serving. Store in an airtight container (up to 1 week in the fridge).
